When the Genshin Impact Test of Courage quest asks you to choose between Ayaka, Gorou, or Kazuha, you can choose whoever you like best. No matter who you choose, the quest will go the same way, except for the dialogue.
Still, Kazuha has an extra little cutscene, so if you want to see the whole “lore,” you should go with him. Gorou and Ayaka always say the same things that don’t add anything to the story.
